Treat yourself to some delicious, moist muffins laced with eggnog. I had about a cup left of nog, and wondered what I could bake with it. A simple Google search revealed a number of recipes, and muffins seemed easy enough.
In review of the recipe, which will follow, I thought the muffins were excellent. However, I realized that some sprinkled sugar and cinnamon would have been a great finishing touch.
- 2 cups Flour
- 1/2 cup Sugar
- 1 tblsp Baking Powder
- 1/2 tsp Salt
- 1 cup Eggnog
- 1/4 cup Water
- 1/3 cup Butter (melted)
- 1 Egg (beaten)
- 1 tsp Vanilla Extract
- 1/2 tsp Nutmeg
Preheat oven 400*F
Combine dry ingredients
Combine wet ingredients
Mix together
Pour batter in lined or greased muffin cups
Bake for 12-15 minutes
Makes 12 muffins

Great idea. We need to get to the store and pick up some more nog anyway.
I will say that the Christmas parties we attended this year were entirely void of nog- a travesty, I know.
At one party, there was some jalapeno cheese and even a Wasabi cheese. I prefer the jalapeno.
They were yummy, but like you said my recipe was so much better. Love you muchoa and wish you would post a little more. Your blog is too cute and if you ever get time our title does not fit anymore with the new white blog background.
